Spring delicacy plus spicy dipping sauce, now that has a ring to it! Vidalia onion rings are a great side dish or appetizer for a barbeque or get together. This recipe serves 4 to 6 people and can easily be scaled up for large gatherings. Plus, you can make onion rings pretty quickly and easily with a deep pan for frying and a stove top.

Fill a deep frying pan halfway with oil. Heat the oil to medium heat slowly starting with a low setting on the stove and incrementally setting the heat higher until you reach medium heat.

In a bowl, mix together the all purpose flour, corn starch, club soda, salt, garlic powder, and paprika to create your batter.

Cut the root end and stem end of the onions off. Peel your onions. Then, slice them and separate the rings.

Batter the onion rings in small batches and drop the battered onion rings into the hot oil. Be careful and use tongs to place the onion rings in the oil. Fry until golden brown. It will take about 3-4 minutes.

Use tongs to take the onions out of the oil and place them on a towel to drain.

In a bowl, mix together the sour cream, hot sauce, spicy mustard, and cumin for your dipping sauce.
