One-pan Oven Roasted Whole Chicken with Roasted Radishes Dinner Recipe image

This whole roasted chicken is comforting and packed with seasonal flavor. The local, organic chicken pairs perfectly with roasted radishes. Roasted radishes have a subtly sweet flavor. All roasted together in one pan, this recipe is great for a holiday gathering or family dinner. Depending on the weight of the whole chicken, this recipe can serve four to six people. Be sure your chicken reaches an internal temperature of 165 degrees Fahrenheit. No fowling up dinner with this recipe, trust us.

Ingredients

  • 1 ½ lbs. radishes, trimmed and quartered
  • 4-6lb whole chicken
  • 1 lemon, quartered
  • ½ tsp. of thyme
  • 4 tbsp. butter
  • Salt
  • Pepper

Directions

Preheat your oven to 425 degrees fahrenheit. Clean the inside of the organic whole chicken and pat the outside dry. Stuff the chicken with the quartered lemons and thyme.

In a pan grease with butter, line the bottom with radishes. Place the chicken on top of the radishes. Salt and pepper the chicken. Put the pan in the oven for 1 hour and 15 minutes or until the internal temperature of the chicken is 165 degrees fahrenheit.

Allow the chicken to rest in the pan covered with aluminum foil for at least 15 minutes.

Carve the chicken and serve with theradishes on top or on the side. It's up to you!

Pro tip: One pound of the uncooked chicken is about one serving, so if you are cooking for 6 people look for a 6lb whole chicken.
